Welcome to our very first Sunday Recipes with Elizabeth & The Kitchen Crew! Cooking is rarely a solo activity around here. Arduino is looking for bread, Hadoop is ready to volunteer as taste tester, and Billy is wondering why we're not making tuna.

Today we're making a colorful, satisfying breakfast from my cookbook, Pass the Guacamole and Pet the Dogs. Sweet potatoes provide fiber, potassium and beta-carotene, while eggs add protein. Best of all, everything cooks in one skillet!

Sweet Potato & Egg Breakfast Skillet

Prep: 10 minutes · Cook: 15–20 minutes · Serves: 2

Ingredients

  • 1 small sweet potato, peeled and cut into small cubes
  • 1 tablespoon olive oil
  • ½ cup chopped bell pepper
  • ½ teaspoon smoked paprika
  • 4 large eggs
  • ¼ cup shredded cheddar cheese
  • Salt and black pepper, to taste

Directions

  1. Heat the olive oil in a medium skillet over medium heat. Add the sweet potato, cover, and cook for 8–10 minutes, stirring occasionally, until almost tender.
  2. Add the bell pepper and smoked paprika. Season lightly with salt and pepper and cook for another 3–4 minutes, until the vegetables are tender.
  3. Make four little spaces in the vegetables and crack an egg into each one.
  4. Cover and cook for 4–6 minutes, or until the whites are set and the yolks are cooked the way you like them.
  5. Sprinkle with cheese, cover for another minute to let it melt, then divide between two plates.

Elizabeth's Two Cents

Cut the sweet potato into pretty small cubes. They cook much faster, which is important when breakfast is standing between you and your first cup of coffee!

Easy serving idea: Top with sliced avocado or a spoonful of salsa.
